CULTURE AND HISTORY: Once largely widespread throughout the region, today, the sheep of the Langhe has considerably decreased. Recognizable by its typical mutton snout bearing no horns, it has white coat and long and slim limbs.
DESCRIPTION: Tuma cheese has cylindrical shape and weights approximately 200 to 300 g. It has tender texture sometimes showing rare small holes. Diameter: 12-15 cm., Thickness: 2-4 cm.
