CULTURE AND HISTORY:Already famous in the fifteenth century, the area of production is limited to the valtellinese territory. The origin of the name goes back to the way of saying salaa come brisa (salty as the brisa, a bovins’ gland particularly sapid).
DESCRIPTION: It is a product of bovine’s meat meant to be eaten raw. The bresaola has the look of the muscles from which is obtained but theese muscles can be thined taking on cylindric or parallelepipedal forms. |
