HISTORY And CULTURE: It takes the name after the city of Bra that once was the greatest aging and commerce centre of cheeses produced on the Cuneo hills.
DESCRIPTION: Made of partially foamed cow milk. The dough is ochre yellow coloured, with small holes not very diffused. The crust is straw dark coloured and progressively, with the extent of the aging, it tends to a tawny one. Nicely perfumed, spicy and saporous. Aging : 6-8 months.
