CULTURE AND HISTORY: The Cinta Senese is a valuable pig breed of the hill. The ownership of this animal, resistant to adverse atmospheric conditions was a warrantee of survival for the dairies of the Chianti mountains, isolated for 3-4 months of the year.
The Slow Food Presidium works with the Tuscan region in order to select the breed and revive the breeding and transformation of this animal’s meat.
DESCRIPTION: The meat is thick, dried and red intence coloured. Ageing for 18-24 months. |
