CULTURE AND HISTORY: It is part of the cold cuts tradition of Cremona. However widespread it may be, today people have difficulties to produce it with the species of a time that are supplanted by pigs of importation less valuable and more suitables for the industrial breeding.
The Slow Food Presidium, supported by the Emilia Romagna Region, wants to recover the natives local species; besides, it has the purpose to put together a group of artisans willing to raise these animals within the traditional system.
