HISTORY AND CULTURE: It belongs to the family of the ossolana mountain toma, amongst which it represents a 'cru' particularly precious. The particular taste of all the toma of the Valdossola is said to have its origin from a particular grass, that grows only in this valley. But it is really the pasture in its whole that transfers to the cheese its organoleptic specificities.
DESCRIPTION: Rough crust brown coloured that tends to dark brown. Compact dough, rather soft, oily, with delicate holes, gold yellow coloured or straw-yellow. Flat faces with a diameter of 30-40 cm. Thickness 10-15 cm. Weight 4-6 kg.
